Growing Conditions

2016 was an all round successful vintage for Bordeaux and Paradise Rescued, rounding off a nice hat-trick of vintages. The first half of the season was wet and cold but great flowering conditions followed by a warm dry summer with cool evening conditions setting up a great run into harvest.

Nose

Red and black cherries with overtones of blackberries.

Palate

“The stunning Paradise Rescued B1ockOne 2016 amply demonstrates the subtle charms of this lovely grape: elegant, smooth red and black fruit flavours, medium bodied, with characteristic hints of spice and chocolate with a lovely fresh vibrancy.” Terry Kirby, The Independent Nov 2020

“Paradise Rescued B1ockOne exhibits one of Bordeaux wines most attractive features : that combination of ripe red and black fruit with appetising freshness and some food friendly tannin…” David Williams, Guardian Newspaper UK Nov 2020

Appearance

Deep crimson with a tinge of velvet.

Food Pairing

B1ockOne Cabernet Franc is a food friendly wine that pairs best with roast meats, baked salmon or tuna and firmer cheeses, particularly goat or yew. Try serving chilled in summer as an aperitif.

Aging

Following malolactic fermentation, the young wine was racked off into barrels for 11 months maturation in 1-3 year old French oak.

Harvest

The fruit was hand selected and picked. The grape bunches were de-stemmed and lightly crushed with further deselection of unwanted berries before charging directly into stainless steel vats.

Bottling

The wine was removed from barrel into vat, tested and bottled with minimal filtration.
