Growing Conditions

2016 was an all round successful vintage for Bordeaux and Paradise Rescued, rounding off a nice hat-trick of vintages. The first half of the season was wet and cold but great flowering conditions followed by a warm dry summer with cool evening conditions setting up a great run into harvest.

Nose

Dark plum with gentle blackcurrants and a hint of chocolate.


Palate

Appearance

Rich full ruby red.

Food Pairing

Pairs beautifully with richer dishes including grilled meats that include tomato and herbed sauces. Perfect also with medium hard to softer cheese. Try finishing the evening with a bit of chocolate.

Aging

Following malolactic fermentation, the young wine was racked off into barrels for 11 months maturation in 1-3 year old French oak.

Harvest

The fruit was hand selected and picked. The grape bunches was de-stemmed and lightly crushed with further deselection of unwanted berries before charging directly into stainless steel vats.

Bottling

The wine was removed from barrel into vat, tested and bottled with minimal filtration.
